
The Sweet Strawberry Salad is fresh, delicious, and plant-based. It’s a great way to get greens with a little bit of sweet. In the summer, I find myself needing more sugars because of the heat. I also prefer to eat lighter meals. This makes me feel full but doesn’t feel too heavy in my stomach. There’s also a little bit of added crunch from the pomegranate seeds in the dressing. It’s also the perfect way to sneak in some greens with some sweets. All of the flavors compliment each other well and dump in as much sliced strawberries and jicama as you’d like!
A little about some of the ingredients…
Lemon Balm – If you have anxiety (like me), this salad can be helpful for that because of the lemon balm. This herb is really calming and is also a great aid for digestion. This herb is also a dream pair with strawberries.
Jicama – It’s a root vegetable native to Mexico. It’s also really good for digestion and gut bacteria. Jicama is really versatile and I used it for it’s crispness. It doesn’t really have a strong taste, so I used it mostly for the texture it provides.
Strawberries – They remind me of summer and are full of fiber and antioxidants. They also help lower cholesterol and are sweet and delicious! 🥰
Apple Cider Vinegar – it has antioxidants and antimicrobial properties. This means it can help kill harmful bacterias. It’s also really good for the skin.

Sweet, crisp, light, and fresh salad. Plant-based, gluten-free, and dairy-free.

Ingredients
DRESSING
- 1/4 cup of pomegranate seeds
- 1/2 cup of raspberries
- 1 handful of lemon balm
- 1/4 cup of olive oil
- 1/2 juiced lemon
- 1 tbsp of apple cider vinegar
SALAD
- chopped romaine + mixed greens
- strawberries, thinly sliced
- jicama, peeled and thinly sliced
Instructions
- add the dressing ingredients to the blender and blend on high until thoroughly blended.
- chop the salad ingredients.
- put the salad ingredients into a large bowl and pour in the dressing.
- toss with spoon of hands.
Notes
I use more mixed greens than romaine. I also try and chop the greens into smaller pieces, so it’s nicer to eat.
