It was the most magical I’ve seen it! watching the fluffy pink and white blossoms makes my heart feel so calm and peaceful. have too many hard boiled eggs for easter? this salad is a great way to put them to use with pickled and fresh brunch flavors. I’m obsessed with the pink beet mayo 💗🥺

even if you can’t have sweets on easter, you can still be festive and brighten up any dish with pastel colors. using beets is my favorite way to do that. eat what makes your body feel good no matter what the occasion is 🌸😙💐

INGREDIENTS

♡ a hard boiled egg, quartered
♡ microgreens
♡ steamed beets, diced
♡ pickles, diced
♡ dill
♡ beet mayo (mix beet juice in mayo)
♡ pepper

INSTRUCTIONS

♡ boil an egg
♡ prepare beet mayo in a bowl. start with less beet juice until you get the pink color you desire
♡ slice the egg, pickles, and beets and put all ingredients onto a plate and enjoy : )

if you loved my heartbeet brownies, you will love this smoothie! it’s rich and chocolatey with the perfect red velvet hue and I love drinking it out of a wine glass 😌 doesn’t take very long to make but I recommend steaming the beets ahead of time. a roasted beet would also work too! enjoy : )

♥ 1 small beet, steamed
♥ 1.5 bananas, frozen
♥ 1/2 cup of almond milk
♥ 2 tablespoons of cocoa powder
♥ 1 teaspoon of maca powder (optional)
♥ 1/3 cup of dark sweet cherries, frozen
♥ 1/2 tsp of vanilla extract

♥ blend it all together (っ˘ڡ˘ς)

I think I’ll be making my shamrock shake all yea I think I’ll be making my shamrock shake all year round! and I love it in a bowl with cacao nibs sooo much 🥰 I’ve always been obsessed with the mint matcha combination. and I love how energizing they are together! there is also some nostalgia to it for me as well. when I first moved to nyc (almost 6 years ago 😳) I used to get a matcha mint drink from juice press and now that taste reminds me of the newness of a place and experiencing it with fresh eyes. I love that so much (and especially in times where we can’t explore new places as much) 💗

I also want to say how important it is to be an ally to the Asian community. I first knew matcha when I lived in Japan and now it has become very globalized. I love matcha and enjoy it so much and I think it’s important to support Japanese companies like @ippodoteausa which has been around for over 300 years. if you are white, like me, and enjoy Asian foods, show support with your dollar and your voice. donate if you are able too. I also think it’s healthy to have conversations about cultural appropriation/appreciation and to have empathy while doing so.

there are little things I like to do in the beginning of the day and I live for peaceful moments like these even if it’s only for a few minutes. sometimes I know that the day is going to be crazy, but this moody matcha moment transports me away from the worries of life. I used to be so obsessed with being perfect at sch I used to be so obsessed with being perfect at school and being productive at all times. not going to lie, there is still a part of me that still is BUT I recognize it now. whenever I put my energy into too much productivity I notice things don’t flow as well as they do when my needs are getting met which is relaxing, going on long walks, talking to people for hours, taking baths, being outside, and expressing my style through every *little* thing I do. 🌸🦢

I love to visualize food experiences off the plate before I experience food on the plate. It gives me such an appreciation for the food and staying present with it makes me love my body so much. for me, this is my body positivity and a reminder that we are a part of nature and food is such a great way to feel in touch with that 🌻🌿

some people might look at this and say it’s not a real pizza, but it is to me. I prefer eating my foods mostly from veggies because it feels good on my stomach. and there is no right or wrong way (actual crust from flour or veggie crust). but this is what works for me. sometimes I see posts bashing health foods and calling it ‘diet culture’ but to me that is looking at it through a narrow lens. 

when I left modeling, I remember people pushing food on me yet openly criticizing my body. “I notice your body looks like _.” the worst is when they would say “you look so healthy.” like when did my body become a topic of conversation?

people would ask me why I wasn’t eating more? and that I should be eating more bread or “real food.” There was this constant pressure that people were putting on me and I didn’t even get why the focus was always on what I was eating. and yes, I had dealt with eating disorders but my food selection had/has NOTHING to do with that.

I’ve always had a sensitive stomach and it hurt to hear people say that I was eating something because I “wanted to look a certain way.” the comments following the bread or cake encouragement was always “but you’re already skinny.” and it disturbs me that the assumption was skinny = happy. it was the assumed goal I never asked for. it felt limiting and sexist. like there was nothing I could ever do that was right. 

the truth is that it’s way more complex than an ED or diet culture. I’m sensitive person - to people, places, sounds, and foods. when I eat something that my body doesn’t agree with it fuels my depression and this is something that has taken me a long time to realize. and NO, it doesn’t stem from the way I want to look. the people that judge someone for eating anything are the very people that are judging themselves. and the women that are saying this are also upholding misogyny. 

and all I’ve learned is that no matter what I do, I will always be criticized. if you’re reading this and have ever felt this way, don’t listen to any of them. you know you’re truth. you know who you are. someone will always be mad, but make sure it isn’t you. ♥

I’ve honestly caught myself back in disordered eating thoughts around food the past weeks. this is something that has happened many times on my healing journey but definitely a lot less than it used to. and it’s completely a normal thing to experience. we are like the pilots of a plane. when the body is going off course, we can check in and redirect. I notice whenever I forget that I have a body I thrive. this maybe sounds weird, but this thought has always helped me for some reason and I don’t let ED thoughts get in the way of what I naturally want to do. when I want to move, I move. when I want to sleep, I sleep. when I want to eat, I eat. when I don’t want to eat, I don’t eat. I close my eyes and listen within. It’s not how can I be better, it’s how can I be with myself here now? and this has always made my heart the happiest. ♥

“the last experience doesn’t have to be the mo “the last experience doesn’t have to be the most significant one.”

this can be true in relationships, careers, sports, and so on. there are so many beautiful things that can turn ugly, go wrong, and become incredibly painful. and it’s easy to let one bad experience detract from all the beauty of the bigger picture.

maybe you said something you didn’t mean to say. maybe you could have reacted differently. maybe you could have kept going just a little bit longer. maybe it would’ve worked out if you had stayed. maybe if that one bad thing didn’t happen, it would all be perfect -

but these thoughts don’t have to define or minimize the love that existed. we tend to attach ourselves to the last experience even though it isn’t needed to define the experience as a whole. can you remember what about the bigger picture that made you feel the most alive? remember when your heart felt so full? there are good and bad things. some things that are toxic were once good. 

we tend to only romanticize things that “work out” but the painful experience calls us to dig deeper. the pain is guiding you somewhere else. it’s guiding you towards healing and love in a different form. it isn’t there to torture you. it isn’t there to make you think “what if.” it isn’t there to make you feel less than. 

it’s creating space for you to follow your heart and to have even more joyful experiences. beautiful love is full of layers. the pain is evidence that it meant something to you. and that is something to celebrate. the last experience doesn’t have to rob you of the bigger picture of what once was -

the heartbeet brownies ~ ٩꒰ ˘ ³˘꒱۶~♡ o the heartbeet brownies ~ ٩꒰ ˘ ³˘꒱۶~♡

only took me 1000 times to develop this recipe but I finally got it and I LOVE them. I used to love eating ghirardelli brownie mix and these taste so much like it! chewy, rich, and sweet! I love the subtle red velvet look from the beet and rose petal garnish too! 🥰

DRY INGREDIENTS

♡ 1/2 cup coconut sugar
♡ 1/2 teaspoon of flax meal
♡ 1/4 cup of oat flour
♡ 1/2 cup of cocoa powder
♡ 1/4 teaspoon of baking powder
♡ and a dash of sea salt
 
WET INGREDIENTS

♡ 1 small roasted beet
♡ 1/2 cup of coconut oil
♡ 1/2 cup maple syrup
♡ 1 teaspoon of vanilla extract

ROASTED BEET INSTRUCTIONS
♥ to prepare the beet, roast it in the oven at 400 degrees for about 30 minutes or until tender wrapped in tin foil (a little loose but not too loose). when ready, rub off the skin with a paper towel and it will come off easily. 

HEARTBEET BROWNIE INSTRUCTIONS
♥ preheat the oven to 350 degrees and grease the brownie pan with some coconut oil and set aside. 
♥ mix the dry ingredients in the bowl and set aside. add the wet ingredients to the blender and blend on high. slowly add in the dry ingredients until blended thoroughly. 
♥ pour into the brownie dish and bake it for 25 minutes. let it cool and enjoy! : )

NOTES
if you are doing the heart cookie cutter shape, I recommend leaving it in the fridge for a bit. always wash the cookie cutter after each time so it comes out smoothly as possible. I know the beet isn’t technically a wet ingredient but just go with it ♥

there’s going to be times when everything seems unbearable and it’s okay to take breaks, but don’t stay there forever. remind yourself why you started in the first place. what makes you feel the most alive in the most painful of times? 

we can’t always choose what happens to us, but we can choose how we react. if you’re in one of those painful times, show yourself compassion. you don’t have to search for the light at the end of the tunnel. it’s already in you. 🌥

this recipe is inspired by my by chloe cravings in NYC. whenever I order in, I ALWAYS get their sweet potato based mac and cheese, so I had to recreate my own. 

If you have chronic cravings for a meal from any restaurant I strongly recommend recreating it and making it at home. you’ll feel accomplished and it’s much better made at home (also saves so much $$$)

making food sexy ❥ I want my food to be sexy fo making food sexy ❥

I want my food to be sexy for me. I spent so much time fearing it and it used to be something that repulsed me. I saw it as the enemy yet a necessary evil. It’s taken me years to heal my relationship to food. 

instead of thinking of how food has controlled me, I switched my thinking to what entices me? what makes me want to want food?

when I left the fashion industry, I felt even worse when people where like ‘oh eat this potato, you can eat now blah blah.’ and I thought to myself, there is nothing sexy about this. it all felt so extreme. once again I felt repulsed, trapped, and controlled by my fear of food. 

now I just ask myself better questions. what is desirable about my food and what beauty can I derive from these ingredients? my food is art. it is my style. it represents me aesthetically and sensually. this is what makes me want to want food. 

these microgreens and blossoms are delicate like lace and my favorite way to eat greens is with a good sauce for added moisture and depth of flavor. recipe for plant sauce is in my link in bio (っ˘ڡ˘ς)

Here’s a simple recipe that can be made very last minute - chocolate covered cherries 💗🍒🌸🍫💞

INGREDIENTS 
♥ dairy free chocolate mini chips 
♥ frozen dark sweet cherries
♥ sea salt

INSTRUCTIONS
〰️ melt the chocolate chips in a bowl in the microwave. melt it in 30 second intervals to avoid burning and stir. do this until perfectly melted. 
〰️ put parchment paper onto a plate and dip the frozen cherries in the chocolate and set onto the parchment. add a dash of sea salt to each. 
〰️ let sit out until completely dry.

NOTES
♥ the cherries can melt a little on the inside and it’s truly amazing!
