This avocado gazpacho is creamy, spicy, and sooo refreshing especially with this summer weather. It honestly really makes me miss Spain in the summer even though this isn’t gazpacho gazpacho. It’s filling enough yet light enough and aside from the taste, that’s what I love about it. It’s feel-good food. All you need to do is to chop the larger ingredients into little pieces and then blend it all. So easy! And delicious 😉
Why Avocado Gazpacho?
Avocados – I like the avocado alternative to tomatoes, because sometimes it’s hard on my stomach to tolerate the acidity in tomatoes. Avocados are fresh, creamy, and full of healthy fats. They are nutrient dense and rich of B vitamins.
Onions – Full of antioxidants and sulfur which is needed for the protein synthesis.
Lime Juice – Good for the skin + digestion.
Cucumber – hydrating. Gives the soup the fresh, cooling element.
Jalapeño – Vitamin A, C + potassium. Spices up the soup, adjust to your liking but in my opinion it is necessary because I LOVE spice!
Garlic – Medicinal properties. Helps boost the immune system.
Apple Cider Vinegar – boosts digestion.
Olive oil – healthy fats and honestly tastes amazing with almost everything!Print
A creamy, spicy, refreshing cold soup. Vegan, gluten-free + dairy-free.

- Yield: 8 mini bowls + a little leftover 1x

- 4 hass avocados
- 1 tbsp lime juice
- 1 small yellow onion
- 1 small cucumber
- 1 small jalapeño
- 2 garlic cloves
- 1 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1/2 tsp sea salt
- cracked pepper to taste
- Chop the onion, cucumber, jalapeño + garlic into small pieces.
- Add all of the ingredients to the blender and blend on low first, then high.
- Serve in the avocado shells for cuteness + the perfect serving size. Optional garnishes: drizzle of olive oil, shallots, spices, or cilantro.
For the cucumber, I used a larger one and cut about a little over 1/4 of it. Keep the avocado shells/skins if you want to serve it this way! 🙂
